How To Make Hairy Bikers Homity Pie Recipe

  1. Make the pastry: Pulse both flours, butter, and a pinch of salt in a food processor until the mixture resembles fine crumbs. Add the egg and just enough cold water to bring the dough together. Shape into a ball, wrap, and chill.
  2. Parboil the vegetables: Bring salted water to a boil. Add potatoes, carrots, and turnips. Cook for 4 minutes. Add broccoli and cook for 2 more minutes. Drain and let cool.
  3. Cook onions and garlic: Melt butter in a frying pan, add onions with a pinch of salt, and cook until soft and lightly golden. Stir in garlic, cook for 2 minutes, then let cool.
  4. Mix the filling: In a large bowl, combine cooled vegetables, 100g of the Cheddar, parsley, and the cooled onions and garlic.
  5. Line the tin: Roll out the pastry on a floured surface and line a 20cm deep pie dish or cake tin. Spoon in the vegetable mixture.
  6. Add the cream mixture: Whisk the milk (or water) with mustard, then stir into the cream. Season lightly. Pour the mixture over the filling, then top with remaining Cheddar.
  7. Bake the pie: Preheat oven to 200°C (180°C Fan). Bake for 40–45 minutes until the pastry is crisp and the top is golden. Let rest for 10 minutes before slicing.
