- Chop the apple: Place the dried apple in a food processor and blitz until finely chopped.
- Make the dough: Add the self-raising flour, cubed butter, sugar, and a pinch of sea salt to the processor. Blend for about a minute until the mix looks like fine crumbs. Remove 3 tablespoons of the mixture and set it aside.
- Add the egg: Crack in the egg and pulse until everything comes together into a dough. Scrape the sides if needed.
- Shape the cookies: Divide the dough into 24 pieces, roll them into balls, and press them into 4cm rounds. Place them on the baking trays.
- Add the topping: Sprinkle the reserved crumb mixture over the cookies and gently press it down.
